If you want to make cinnamon rolls, you have to pay attention to the sun.

Mornings are okay if you live in the North and it’s late July and you like Jane’s Addiction at 7am. That’s enough light to make shit happen. It’s warm enough at your kitchen window for the ingredients to do what they need to do.

Me? I like late afternoons in March. I like Billie Holiday. I like to put my dough in steel and wrap it with a little oil and keep checking on it every five minutes. Not because I’m worried. I check because I want to watch something rise from nothing. I check because the light by the window fucks with my atoms.

I check because that’s where the radio is. It’s where the music comes from.
